  • This yummy pea pesto cauliflower gnocchi is definitely on the menu for dinner tonight. A couple of weeks ago, I had some basil from my @imperfectproduce box that needed to be used asap so I threw this pesto together with whatever I had on hand and it turned out amazing!

For the pesto:
INGREDIENTS
1/2 C. raw cashews
1 C. basil
1 C. peas (thawed frozen peas work well)
2 garlic cloves
1/4 C. nutritional yeast
4-6 Tbsp of olive or avocado oil depending on desired consistency 
Salt and pepper to taste
DIRECTIONS
Blend all ingredients together in a food processing while slowly adding the oil to achieve the right texture
