This past weekend was my California-versary- the day I arrived in California to stay. I couldn’t think of a better way to celebrate than run some SoCal mountains and follow it up with a SoCal breakfast. Gluten-free avocado toast with tomatoes and jalapeños, topped with poached eggs. This isn't just any avocado toast, it's GRILLED CHEESE avocado toast and I'm still mad at myself for not thinking to combine two of my favorites sooner. My sisters will probably be mad too when they see this because honestly if you could describe us as a food, it'd probably be "Grilled Cheese Avocado Toast". With bacon. Swipe for more photos.
I've been trying to find ways to use @julianbakery Keto Thin Bread that compliments its texture and nutty flavor. Grilled the bread in butter with Cheddar & Grueyere Melange from @traderjoes, smashed and sliced avocado drizzled in lemon juice with grey sea salt and smashed garlic, topped with red onions and scallions.
This combination with this particular bread has worked the best so far out of what I've tried and posted. I'm working on a blog post now of what I loved and didn't love of the things I've made with this bread and it will be posted by Friday.

okay okay now TOAST TUESDAY is EVERYTHING today bb 🔥🙌🏼🌻💛🌟🤤 I have honestly outdone myself 💁🏼♀️ like this toast was AMAEVEING (lol hate myself for that but I had to say it😝) I legit could not decide between oats, pb toast, or avocado toast & then this idea 💡 came to me for my lunch/pre-run meal & LET ME TELL YA this toast FULED ME for my run 🏃🏼♀️ I ran for over an hour today bc I had so much energy 🤪 + the views on the trail I ran on were FANTASTIC (if you can ever run in the woods/on nature trail I recommend it bc it’s life changing & nature is just dope in general🌲🌸🌞🦋🕊) ANYWAYS that’s all I got to say & now I’m off to sushi bbs 🍣✨ #blessed 😌
