📍 Pomona // Every year Sebastian & I come to the fair to get these baked potatoes! They are so good, I usually get the one with alfredo & chicken (bottom), & Sebastian tried a new one by getting one with chili, cheese, & sour cream. We’ve tried almost all the baked potatoes that they offer & they’re all so good. we also always get the souvenir cup because we usually stay there for a good amount of time and need the refills 😂
The perfect baked 🥔
Rub olive oil over your potato, then sprinkle on some salt and pepper. Bake at 375 degrees for 1 hour. Turn it over half way through. I think 1 hour is a good amount of time if you are going to do potato skins or twice baked potatoes. Leave it in the oven a little longer if you are just looking for a nice, soft potato to top with sour cream☺️
Baked potato with asparagus filling 🙌🏼😋❤️
Wash big baking potatoes and cut a cross along the top. Season with salt and pop in oven for about an hour depending on the size.
Fry onions, garlic, springs onions in olive oil. Add chopped mushrooms and stir for few minutes. Add salt, pepper, and herbs. Add canned asparagus (Save the water!) and fry for a minute or two. Add vegan cream and some asparagus water. Mix 1 tbsp corn starch with some water and add to the pot. As the sauce thickens, add more asparagus water and vegan cream until it has the consistency you like.
Add frozen peas and let simmer.
When the potatoes are done and crispy skinned, cut them open and fill with the asparagus sauce. Serve with side salad.
