  • Today was Soup and Egg Day at @iceculinary! I made Cream of Carrot Soup using two different thickeners; Arborio rice in one batch and potatoes in the other batch of soup. They essentially tasted the same and had the same texture, but it was great to learn that you can easily use whatever starch you have on hand to thicken a soup (rice, potato, oats, etc)... you don’t always need a roux to thicken things! 
Next, we learned how to properly make hard boiled eggs, scrambled eggs, poached eggs, American omelet and French omelet. Although they’re all basic techniques, it was fascinating to learn how to make these simple dishes from a trained chef because there are small details about how to cook them that make all the difference. 
Something I found interesting is that you can prepare poached eggs in advance and store in cold water before reheating. 
All in all, today was a great day! Thankfully, I wasn’t tired at all throughout the day even though I only slept for 2 hours last night 😭🤣. Also, I learned how to make homemade mayo today which is quite simple!! Who knew?! It tastes great and only requires 4-5 ingredients 👏👏

  • Ok so I know I quickly shared in my stories yesterday that this buttercream frosting recipe was so life changing amazing but that’s the thing about amazing things, you don’t shut up about them! 😂 
First I’ll let you know about the recipe I used for the cupcakes by @agirl_defloured. This has been my go to chocolate cake recipe for a while now because it doesn’t not taste like you are eating a typical gluten free cake. It is so perfectly moist, rich but not overwhelmingly sweet and has totally satisfied all the chocolate cake cravings I have ever had! So if your interested in the recipe go to her site www.agirldefloured.com and search Gluten Free Fudge Cake. For the gluten free flour I swear by @bobsredmill 1to1 baking flour and I used organic coconut sugar instead of white sugar and adjusted the cook time to 20-22mins because I made cupcakes and not an actual cake. 
Now for the frosting... I am not usually a frosting lover, especially buttercream frostings because my teeth ache afterwards from the sweetness. Also, anytime I’ve ever needed a buttercream frosting recipe I would just randomly search for one on google and use the one I found with the best reviews, but I’ve been mostly underwhelmed by the results every time. But alas I needed a recipe for these cupcakes and my eyes have been overly indulged by @preppykitchen, just go take a look at his profile and get ready to be very very hungry lol. His recipe for buttercream frosting seemed so simple and watching the video for it as well just made my frosting dreams so attainable. This is by far the best buttercream frosting I have ever eaten. Everyone at the party loved it and we will be using this one for every birthday cake in our foreseeable future.
