Slow Cooker/Instant Pot Turkey & Kale Stuffed Manicotti
🔸Ingredients
8 ounces manicotti shells, UNCOOKED
1 lb lean ground turkey (I used @jennieo)
1 egg
1 garlic cloves, minced
1 cup kale, chopped
2 cups shredded mozzarella cheese, divided in two
1 cup low-fat cottage cheese
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp pepper
2 28-ounces crushed or diced tomatoes (56 ounces total)
1 cup water (for pressure cooker)
🔹Instructions
🔻Slow Cooker: In a large bowl mix together raw ground turkey, chopped kale, garlic, egg, cottage cheese, 1 cup of the mozzarella cheese, and Italian seasoning, salt, and pepper. Add mixture to a large plastic bag and close. Cut one of the bottom corners of the plastic bag to make a piping bag. Squeeze mixture into manicotti shell until full. Repeat until all the shells are stuffed. Pour 1 cup (or enough to cover the bottom) of the 56 ounces crushed tomatoes in the bottom of the slow cooker. Add the stuffed manicotti shells on top. Pour the remaining 55 ounces of crushed tomatoes on top of the shells until all she shells are covered. Cook HIGH 3-4 hours or LOW 5-7. Add remaining 1 cup of mozzarella cheese on top and cook and additional 15-30 minutes or until cheese is melted.

  • I did a little meal prep this week. SWiPE to see my mini meal prep! I made chicken thighs in the oven with @kindersbbq marinade, it is two carbs per tablespoon. The soy sauce in this gave it so much color! I threw frozen green beans in the Crockpot with a ranch packet, Worcestershire sauce, and a bit of soy sauce and salt. In the oven is two pork-beef blend patties seasoned with garlic salt and @webergrills gourmet burger seasoning  and broccoli. Quick and easy. Most of my time spent was inactive. I don’t meal prep enough! What are some of your favorite keto meal preps? Share! Tag a friend who is a meal prep master! We are not worthy of your wisdom, but maybe help us all out anyway? • @butcher_box chuck roast (2.5-3 lbs) • 2 tbsp coconut oil or butter • 1tsp each salt & pepper • 1 tsp thyme • 3 cloves garlic, minced • 1 tbsp Italian seasoning • 1 medium onion, thinly sliced or chopped • 1.5 cups beef bone broth • 6 large carrots, chopped • 1 can organic mushrooms • 1 can organic green chili’s • 1 Tbsp arrowroot flour + 1 Tbsp water (optional)
DIRECTIONS:
• melt oil or butter in a large skillet, add onion & sauté 4-5 min until tender & slightly browned • add roast to the pan, browning on each side (I cut the roast into a few pieces beforehand) • poor broth into skillet • add roast, onions, broth, and all remaining ingredients, except carrots, arrowroot & water to the crockpot • cover & cook on high for 6 hours or low for 8-10 hrs • after two hours of cooking, add chopped carrots • if you want a thicker stew, whisk together the arrowroot & water and stir into the crockpot for the last 10 minutes of cooking • shred roast and serve over rice or potatoes • such a flavorful dish!! 🤤 · · · · · · · · 
I also made some roasted brussles and broccoli, with spices, avocado oil, & sesame oil 😋
