  • 🎉 Costco.  The mecca of superstores!  Seriously though, we freaking love @costco it's a little drive from where we are so we dont get there too often, which may or may not be a good thing because you'll be sure to spend your whole paycheck! 🤷‍♀️

  • Throwing it back to this epic dinner I shared on my stories earlier this week 👉🏻👉🏻 one crispified @mikeys paleo (gifted) tortilla - just toasted on a skillet until crunchy 🤯 - with black beans, veggies and nacho-stuffed zucchini boats filled with my homemade #vegancheese sauce 😍. With how innnsanne my schedule is right now (going to grad school, finishing my thesis, teaching English 103, working another job and blogging 😬😬), I don’t have time to make these kind of more time intensive meals as often...but it tastes just as good deconstructed 🥦🥒🥬 and just eaten as roasted veggies with cheese sauce drizzled over 😉.   • 🎉 Are you in need of a side dish you can feel good about? My family's favorite Mac Salad is gluten free,  high in protein, and rich in Omega-3's!  Does it get any better?

My family LOVES mac salad! Made with @eatbanza we wont be struggling with the digestive woes from gluten containing pasta later! 🙌
.
Their pasta contains 23g of protein!  The same amount of your leading protein powder.  I reccomend skipping the shake, and eating the mac! 😜

PRO TIP - Cook your @eatbanza in your instant pot! Super quick, no foam overs!

I make this Mac Salad with @primalkitchenfoods mayonnaise, wild caught tunafish and farm fresh eggs.  Theres no lack of Omega-3 fatty acids in this salad!

1 Box Banza Pasta 
1 Can Wild Caught Tunafish 
2-3 Hard Boiled Eggs (Farm Fresh!)
2 Stalks Celery
1/2 Sweet Onion
1/4-1/2 Cup Mayo (Made with Avocado Oil!!)
Pink Himalayan Salt
Black Pepper
🍽
1. Boil your pasta
2. Chop veggies & hard eggs, break apart tuna while pasta is cooking.
3. Drain pasta and rinse in cool water.
4. Add all ingredients to large bowl & stir to combine.
5. Season with salt and pepper to your liking

I used some prepared foods I had in my cupboard to short cut this recipe… 😝 measurements aren’t exact but no worries, it will still come out great. ✨ Feel free to use any berries you wish, or a mix of berries. 🍴 I used strawberries! The key is making the shortbread/crumble topping with this keto cookie from @knowfoods with non-dairy (plant-based) vanilla creamer from @nutpods and this amazing sugar free maple syrup to sweeten it all up from @choczero .

Okay without further ado...
Here are the EASY BREEZY 😆 steps:

1.) Slice one large container of strawberries, thinly.
2.) Toss with ½ tsp. zanthan gum (or cornstarch) (to absorb extra liquid when the berries cook), and 1-2 tablespoons sugar free syrup. I used @choczero Maple syrup but feel free to use real Maple syrup, or Sukrin’s Fiber Syrup (also sugar free). 3.) Pour into a small baking dish (I didn’t even grease it, it didn’t need it). 4.) Start the crumb topping by crumbling 1 or 2 @knowfoods cookies (Cinnamon flavor), add enough @nutpods vanilla creamer until the cookies are covered and soaked. Add in ¼ cup almond or coconut flour (or a mix of both). 5.) Add topping on berries and bake at 375 for roughly 40 minutes or until crumb topping browns
6.) Optional!: I topped mine with @vanleeuwenicecream 🍨🍦(dairy free!) EASY, YUMMY and sooo Healthy!🥰 Ps ! All the above available on Amazon.
