Roasted Leg of lamb
Recipe credit: My mum in law

@whatssumicooking
Wash 2 medium lamb legs(back legs), make deep cuts on them, if they are too big cut in half on the joint & rub the marinating on it well.
Marination:
- Salt to taste .
- 2 tablespoon ginger paste
- 3 tablespoon garlic paste
- 1/4 cup vinegar
- 1/2 cup lemon juice
- 2 teaspoon steak & chops spice
- 2 tablespoon soya sauce
- 2 tablespoon worstershire sauce
- 1 tablespoon aromat
- 1 teaspoon blackpepper crushed .
- 1 teaspoon coriander & cumin powder mix(dhana jeeru)
- Chilli powder to taste
- Paprika flakes(we added fresh & dried both 3 tablespoon each)
- 1/4 cup rivonia's red pepper sauce, but you can use any that's runny chilli sauce
- 2 heaped tablespoon fruit chutney sauce
- 1/2 cup sweet chilli sauce
- 1/2 cup chilli & garlic sauce
- 2 teaspoon baking powder
Mix very well, rub enough marination required to coat the legs, leave the other on the side. Cook it till done. Add water if needed as it may burn, when done, pour the remaining sauce over the legs, cover the lid, turn it after few minutes & cook till the sauce is cooked well, should take 15 to 20 minutes. We cooked ours on charcoal stove.
Serve as a side or with roti/rice/paratha/naan/mashed potato/wedges/boiled veg. Enjoy & remember me & my family in your duas xx

If you have any leftover, you can pull over the meat & make sandwiches out of it or shawarma or you can use it as a topping for pizza or with sunny side eggs for breakfast or make some simple pasta & add in it or in chowmein or fried rice

  • Barley // shiitakes // walla walla onion // cherry tomatoes // peppers // roasted garlic // rosemary // paprika 🍄 .⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀
Barley #vegan #breakfast bowls, assembled from remnants in the fridge when we realized we had no bread or eggs on Saturday morning. Bean ate all the parts, but was most excited about the barley and the mushrooms. These took about 15 minutes to pull together. Loose recipe below👇

.
Loose recipe:
1️⃣ Reheat cooked barley in cast iron pan, tossing with olive oil, smoked paprika, garlic powder. Cook until golden and slightly crispy in spots. Spoon into bowls.
2️⃣ Slice half a large onion and sauté in the same pan over low heat in olive oil, season with s&p. If you have some sweet peppers, add those in too. Cook until soft and starting to brown, then stir in some roasted garlic.
3️⃣ While the onion is cooking, slice your mushrooms and half the tomatoes. Mix the tomatoes with olive oil, s&p, and some fresh herbs and set aside.
4️⃣ Put the cooked onion into the bowls on top of the barley. Return the pan to stove and turn up the heat. Sauté mushrooms until softened and browned. Add to bowls.
5️⃣ Spoon tomatoes on top of bowls. Sprinkle with pumpkin seeds and enjoy.
