By far my most ambitious meal to date.
Spatchcocked chicken with a lemon and herb rub, injected with butter and fresh chilli. Then two pork loins that I marinated in cider, cinnamon, and brown sugar for 24 hours. Cut open and stuffed with an apple puree that I put on the bbq on a bed of apple, onion, red and white onions, fresh cider, brown sugar, cinnamon and wrapped in smoked bacon.
A lot of components and effort went into this one and I used almost every single bit of kitchen equipment to make it!
It tasted fantastic and by far one of the best meals I've made. More pictures to follow in the next few days. Time to relax with a very large glass of white wine and some cake. 🍰
