▫️Scallop/quinoa/sweet potato purée – absolute love from the first fork. Nevertheless it’s quite simple, I was astonished by this ideal balance of sweet, salt & sour notes. Tenderness of scallops, creaminess of quinoa cooked in coconut milk and silkiness of sweet potato velouté – just WOW.
