Koraishuti Tikki: sweet pea, ginger and chilli tikkis to bring the taste of the Bengali favourite "koraishuti kochuri" to London. I've served the deep fried crispy balls with a tamarind yoghurt, chilli flakes, sumac, a sticky ginger and apple sauce and coriander.
