  • 🍓Why is she so cute?! 😭💕 These @thatsit snack bars are her fav for snack time at school. I told her I would allow her to pick any snack of her choice for school since I’m usually super strict and she said “mom, thanks, but I’d rather stick with these bars bc I know they aren’t full of bad stuff.” OOOOK, then...that’s my girl!!!!👌🏽👌🏽👌🏽🍎🍒 🍓Why is she so cute?! 😭💕 These @thatsit snack bars are her fav for snack time at school.   • Chicken Pot Biscuit! I’ve tweaked the Gluten Free @bisquick recipe so much it became its own thing!

1. Heat oven to 350. In 3 quart saucepan melt 2 TBS butter over medium heat. Add medium chopped onion. Cook-stirring frequently until tender. Stir in 1 bag (12 oz) of frozen mixed vegetables, 2 cups cut up cooked chicken. 1 ¾ gluten free chicken broth or chicken bone broth, 1 tsp Himalayan sea salt, ½ tsp dried thyme, ½ tsp rosemary, 1 TBS minced garlic, ½ tsp onion powder, 1 tsp dried onion. Heat to boiling. In a small bowl mix ¾ cup milk and 3 TBS corn starch. With a wire whisk until smooth. Stir into chicken mixture. Heat just to boiling. Pour into ungreased casserole dish. For more of a pot pie use 2 qt dish and for my chicken pot biscuit use a 4-5 qt dish. 
2. In a small bowl, stir together 1 ½ cup Gluten Free Bisquik, 1 cup milk, 2 eggs (I used flax eggs), 4 TBS Butter and then sprinkle in a little Himalayan sea salt, thyme, rosemary and seasonings of your choice.  Stir until blended with a fork. Drop topping mixture by small forkfuls over chicken mixture. Sprinkle with 1 TBS chopped fresh Parsley. 
3. Bake 25-30 minutes or until toothpick inserted in center of topping comes out clean. 
Tips
For corn free replace corn starch for arrowroot, rice flour or almond flour.
For milk I used unsweetened almond milk.
Flax egg (1 TBS flax meal to 3 TBS water, stir and then let sit for 5 min = to 1 egg in recipes)
Butter can be replaced with ghee or favorite butter alternative.
This recipe can be made up to baking and frozen then bake when you’re ready. It is also easily stored in the fridge to be reheated in the oven or toaster later. Celiac disease is personal to me because not only do I work with those who have been diagnosed with celiac disease, but I also have celiac disease- I was diagnosed as a young adult! I know this diagnosis can be overwhelming for parents, especially if some of your child’s favorite foods contain gluten. Even as a young adult, I felt that way too and so did my parents. My own mama bought a Gluten Free for Dummies book to educate herself and make sure I would be able to enjoy family meals and holidays safely! What did you do when you or a child was diagnosed?
