Tonight’s dinner - grilled bone in chicken thighs, over steamed asparagus (oops), steamed cauliflower with Kerry Gold butter, and a salad with greens, carrots, celery, NY McGowan apples and pickled cabbage. I’ve been on a heavy veggie kick lately for my health.
Dinner tonight is one of my favorites, grilled chicken shawarma! I love Mediterranean cuisine, so I was very happy to come across this recipe that is easy to make at home. I eat my shawarma with a garlic dip made using greek yogurt and a side of cucumbers. This meal is fresh, flavorful, and great for prepping! 😁
I base my marinade from @skinnytaste, making just a few modifications. I use about 1.5 lbs of boneless skinless chicken breast and split the breasts in half. In a bowl, I mix together the juice of 1 lemon, 2 tbsp olive oil, 3 cloves fresh minced garlic, 1 tsp cumin, 1 tsp paprika, 1/4 tsp curry powder, 1/4 tsp turmeric, 1/8 tsp cinnamon, 1/8 tsp coriander, 1/8 ginger, a dash of cayenne, 1/2 tsp salt, and a dash of pepper. I combine that with my chicken and let it marinate for a min. of 4 hrs!
After I set my chicken to marinate, I quickly make my garlic greek yogurt sauce! While you can make this right before serving, I like to make it earlier to let the flavors marry. Basically, you're going to finely mince 1 fresh clove of garlic (I use 2 because garlic). Add to that 1-2 tsp of fresh lemon juice, 1/4 tsp of salt, a dash of cumin, and a dash of pepper! Then you're going to mix that into 6-8 oz of nonfat plain greek yogurt. Done!
I grill up my chicken on the stove. You can serve this on a pita, in a bowl with pilaf, or with fresh veggies! Enjoy. 👍🏻

For this week's Sunday night dinner, I made a marinade with olive oil, rice vinegar, apple cider vinegar, lemon juice, soy sauce, Worcestershire sauce, brown sugar, garlic, and sambal oelek. Then I marinated a chicken breast, cooked it on the grill, reduced the leftover marinade into a tasty sauce, and made sides of buttery sautéed potatoes and roasted Brussels sprouts.
