I’ve never made toffee before, so this was a first for me! And I am very happy with the result 😋 A delicious crunchy toffee is coated top and bottom with bittersweet chocolate and lightly toasted almonds. I love the texture too, perfect bite without being chewy or sticking to your teeth 😉

New method! Second sourdough attempt and we've got some successes 🥰
1. Bread flour is used for a reason
2. Rest time is flavour time
3. Probably need a bit of work on the shaping and scoring
4. Crust needs more crust

Before starting my business I did a lot of research to find out what rules and regulations I needed to follow. 👩🏽💻 Turns out the laws are state specific. Ohio has a pretty specific list of food items that are allowed to be made and sold by Cottage Food Businesses. If you’re thinking of starting a home-based food business you definitely need to review the list, which I link to in the blog post.
Fun Fact: My maternal grandmother also ran a Cottage Food Business! She baked and sold 🍰 for all occasions out of her home in Axtell, Nebraska.
Bread making is therapy. It’s peaceful. The long wait for the bread to proof, and proof again and again and then the bake, offers the most luxurious reward when the science works and the bread rises and bakes to perfection. Well not perfection - because is there any such thing in baking and art and creativity? Everything we create is always a work in progress and I’m ok with that. But anyways, cheers to learning new skills, and discovering the joy that is fresh baked bread 💕
Had a lot of trouble with this weeks loaf... between trying out a higher hydration and a new baking technique (and possibly over proofing) things did not look as beautiful as normal... the good news about sourdough is that it always tastes pretty good no matter what you do wrong! #sourdough#crumbshot
