📋 INGREDIENTS:⁠
1lb chopped chorizo sausage⁠
1/4 cup diced onions⁠
1/2 cup chopped tomatoes⁠
1/2 jalapeño diced⁠
1 tsp keto-friendly flour⁠
2 cups shredded cheddar cheese⁠
1/2 cup heavy cream (or more if required)⁠
2 tbsp olive oil⁠
1/4 tsp garlic⁠
salt & pepper to taste⁠
Keto-friendly dippers (E.G. Keto wrap baked in the oven until crisp like chips)⁠

👨🏽‍🍳 INSTRUCTIONS:⁠
1. Sauté chorizo till fully cooked to top the queso before serving, set aside.⁠
2. In a large skillet, sauté onions, tomatoes and jalapeño until softened.⁠
3. Sprinkle in flour and cook for two minutes.⁠
4. Add heavy cream while continuing to stir until the mixture thickens.⁠
5. Add the cheese slowly, stirring until it’s evenly combines, and add salt and pepper.⁠

Lemon garlic butter steak with zucchini zoodles made by @eatwell101 👌

For those of you not fasting here is a yummy idea for the fam 🙌

Which noodles do you prefer - Team Zucchini or Team Shirataki ?
.
Recipe *1 1/2 lb (650g) flank steak, sliced against the grain
* 4 medium zucchini
* 2 tablespoons olive oil
* 4 garlic cloves, minced
* 2 tablespoons butter or ghee
* 1 lemon, juice and zest
* 1/4 cup (60ml) low-sodium chicken broth
* 1/4 cup chopped parsley
* 1/4 teaspoon crushed red pepper flakes
* Salt and fresh cracked pepper, to taste
The steak marinade
.
* 1/3 cup low-sodium soy sauce (or coconut amino if you’re strictly paleo)
* 1/4 cup lemon juice
* 1/2 cup olive oil
* 1 tablespoon Sriracha sauce (or any hot chili sauce you like)
DIRECTIONS
1. Combine the ingredients for the marinade in an airtight container or a Ziploc bag. Add the steak strips into the marinade, seal and allow to marinate in the refrigerator for 30 minutes to one hour.
2. In the meantime, wash and trim the ends of the zucchini. Using a spiralizer, make the zucchini noodles, then set aside.
3. Bring the steak to room temperature and heat oil in a large skillet over medium-high heat — reserve the juices of the marinade for later. Add the steak strips in one layer and season with salt and pepper. Cook for one minute without stirring.
4. Add minced garlic, then stir the steak for another minute or two to cook the other side. Remove the steak from the skillet and set aside to a plate.
5. In the same skillet, add butter, lemon juice and zest, red pepper flakes, chicken broth, and remaining marinade juices. Bring to a simmer and allow to reduce for 2-3 minutes, stirring regularly.
6. Stir in the fresh parsley, then add the zucchini noodles and toss for two to three minutes to cook it up. Allow the cooking juices to reduce for one minute if the zucchini renders too much water. Add the steak strips back to the pan and stir for another minute. Serve immediately.

-Combine the dry ingredients in a bowl
-Whisk in the eggs
-Melt butter, add to mixture and whisk
-Divide mixture equally into 6 parts, place into a Muffin Top pan or equivalent
-Bake for 12-17 minutes at 350 degrees (varies by oven, watch the first time)
-Let cool on a wire rack

If your main goal is MUSCLE BUILDING I recommend following the CYCLICAL ketogenic diet. The cyclical ketogenic diet entails that you follow strict keto 5 days of the week, most likley Monday through Friday, and then have 1-2 HIGH CARB days. On these days you can eat as many carbs as you want. This is optimal for muscle building becasue that increase in carb intake will spike your insulin levels which will be optimal for muscle building. . If your main goal is ATHLETIC PERFORMANCE I recommend following the TARGETED ketogenic diet. Before trying targeted keto you need to make sure that you have already become keto adapted for awhile. This will make sure that you will be able to use targeted keto effectivley since you will be slipping in and out of ketosis with targeted keto. With targeted keto you consume carbs around your workouts which will help improve your athletic performance, which several studies corroborate.
