The Frittata breakfast loaf 👌
This is a high fibre version of the frittata,  almost like a bread and quiche all in one 😊
Per serving:  3g Net carbs, 28g protein, 29g fat .

This recipe makes 4 servings, so you can keep the rest to snack on as a perfect filler throughout the day should you get too hungry. 
Blend together: 
12 eggs, 2 tablespoons smooth cottage cheese, 1 tablespoon psyllium  husk powder,  1 teaspoon baking powder,  1 tablespoon olive oil, handful of chopped baby spinach, and seasoning.  This morning I used zaatar, which is a traditional Lebanese spice.  But you can season with any of the carbsmart spices or just salt and pepper. 
Once mixed, pour into your pre greased baking tray, and sprinkle cheddar or mozzarella on top. 
Bake at 180deg for about 15 to 20 min. 
Cut into four portions and enjoy 👌

Ingredients (for 8 servings):
4 chicken breasts (can use rotisserie chicken, or leftover chicken)
1 onion (diced)
4 medium carrots (sliced)
2 celery ribs (plus leaves)
1 cup frozen peas
1 tbsp minced garlic
1 tsp dried thyme
2 bay leaves
4 cups chicken broth
2 cups Shirataki Noodles (or low carb noodle of choice)

Instructions:
Add all the ingredients (except the Shirataki Noodles) into your Instant Pot.
Set the timer to 15 minutes on high pressures (Manual Setting).
Quick or natural pressure release.
Remove the chicken breasts and shred. Add back into to pot.
Add the noodles, and stir until everything is evenly mixed.
Serve immediately. (You can also make this recipe in a regular pot, by following the instructions exactly, but simmering on the stovetop for 30-45 minutes instead of using an Instant Pot.)
Only 3.75 net carbs per serving!
