WET
2 ripe bananas, the darker the better
1 egg
¼ cup creamy peanut butter, natural 
¼ cup almond milk 
1 tsp vanilla extract

DRY
2 cups almond flour
¼ cup coconut sugar
¼ cup sifted cocoa powder, unsweetened
1 tsp baking soda 
10 @theochocolate peanut butter cups (x5 two packs), roughly chopped

1. Preheat oven to 375F and line two standard muffin trays with x10 liners or spray with coconut oil. 
2. In a large mixing bowl, add your two ripe bananas and mash until no large pieces remain. Add in remaining wet ingredients and stir to combine.
3. To the mixing bowl, add in your almond flour, coconut sugar, sifted cocoa powder, and baking soda. Stir until just combined. 
4. Lastly, finish the batter by stirring in your chopped @theochocolate peanut butter cups.
5. Split batter evenly between the x10 muffin liners and move trays to the oven. 
6. Bake at 375 for 20 minutes, or until a knife inserted comes out mostly clean (you may have some melted chocolate which is ok - but you don’t want to see raw batter on the knife). 7. Serve warm or store in an airtight container in the fridge for ~1 week, or in the freezer for longer term storage. Enjoy!

  • Tis’ PUMPKIN seasonnnn 🙌🏼 also the fact I  found that @target has @eatbanza WHEELS is a huge highlight of my week LOL I have been wanting to try these! 😻p.s @cucinaantica pumpkin sauce is incredible xo I haven’t grabbed pumpkins yet this season to make my own sauce yet. But when I do! I will post that recipe! I mixed their sauce with my homemade cashew cream sauce to make it a little extra dreamy! Getting in a late start this morning...and by ‘late’, I mean waking up at noon ‘late’ 😅 Was craving all the carbs & runny eggs 😍 So I spiralized some sweet potatoes & cracked in some eggs 🍳 Body is sore from my #lagreefitness workout from yesterday 😳 But feeling good 💪🏼

▫️1 small Sweet Potato, spiralized
▫️2 Pasture-Raised Eggs (@vitalfarms)
▫️1/2 large Avocado, sliced
▫️Spices - Cumin, Garlic Powder, Smoked Paprika, Garlic Powder, Salt & Pepper

How To⁉️
▫️Spiralize your sweet potato. Then add to a pan with a little bit of EVOO. Stir for about a minute before adding in your spices. Cook for another 2-3 mins.
▫️Create a hole in the middle & crack in two eggs. Cover with a lid & cook until egg whites have set.
▫️Serve with sliced avocado & fresh cilantro. Topped with Everything But The Bagel Seasoning.

⏲ 20 Mins Prep Time | Makes 10 Bars
Finally made @rachaelsgoodeats Twix Bars and omg 😮 I now understand what all the hype has been about! 🙈 I kid you not when I tell you that the only thing getting me through the day ⏰, is knowing these Twix bars are waiting for moi in the freezer for me...😍 Sometimes it’s relaxing & therapeutic following someone else’s recipe 💆🏽‍♀️ I just decreased the amount of 🥥 oil used in the layers since it's very high in saturated fats & I knew I'd eat a ton of these a day LOL 😅

Shortbread Layer:
▫️1/2 cup Coconut Flour (@bobsredmill)
▫️1/2 cup Almond Flour (@natureseats)
▫️1/4 cup Coconut Oil, melted (@krogerco)
▫️3 tbsp Honey, warmed (vegan sub maple syrup)
Caramel Layer:
▫️1/2 cup Almond Butter (@wholefoods)
▫️1/4 cup Coconut Oil
▫️1 tsp Vanilla Extract
▫️1/4 cup Monkfruit Maple Syrup (@lakantosweetener)
Chocolate Layer:
▫️1 Signature Dark Chocolate Bar (@evolvedchocolate)
▫️Pinch of Himalayan Pink Salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
How To⁉️
▫️Shortbread Layer: Preheat oven to 350°. Mix all ingredients together in a large bowl. Line 8x8 baking dish with parchment paper & pack down mixture into base. Bake for 10-12 minutes, or until golden brown. Remove once done & place in fridge for 15 mins to let it cool.
▫️Caramel Layer: Mix all ingredients together in a small saucepan over the stove on med-low heat & cook until liquid (~about 2-3 min). Remove from burner & add to your shortbread layer. Place in freezer for at least 2-3 hours.
▫️Chocolate Layer: Place a large saucepan with water on medium heat. Break up your bar into a smaller sauce pan & place inside the large saucepan. Stir until chocolate has completely melted. Remove your dish from the freezer & pour the chocolate on top. Move fast to spread it evenly as it will harden quickly. Sprinkle with pink salt. Place back in the freezer for another 15 mins before cutting.
▫️Store in the freezer for up to several months! But it definitely won’t last long 😂
