White Chocolate Shell - Lemon Ganache - Crunchy Biscuit Base 
Here it is guys! Limited edition bonbons! 
Over at @art__chocolat we are selling just ONE BOX OF 6 of these bonbons! They arenโ€™t even listed on the website yet!

So now that awesome opportunity is out of the way, letโ€™s talk about these bonbons! 
Iโ€™ve had these in the pipeline for a few days now and just procrastinated with actually getting to work with them! Literally I had the moulds painted for a couple days before shelling them! 
Even though I forgot to film it, I splatted blue cocoa butter ALL OVER THE PLACE and pretty big splodges too! I love the effect of it! 
Backed it up with yellow cocoa butter because... itโ€™s lemon ๐Ÿค”

Next I tempered my chocolate using the seeding method. I melted 3/4 of my chocolate to 40c and then stirred in 1/4 until it was 34c or below and all melted. Then it was tempered! 
For my Ganache, I combined a 3:1 ratio of white choc and cream, and then a whole lot of lemon zest and fresh lemon juice! In addition I also added 10% butter for texture and 10% invert sugar for shelf life! 
Then I simply repeated the tempering process for my caps. I melted the shells slightly to create a perfect seal with the caps, to prevent leakages!
