👩‍🍳 RECIPE DETAILS:
.
INGREDIENTS:
▪️1 cup of couscous (uncooked)
▪️1 3/4 cups of boiled hot water ▪️1 cup of chopped cucumbers
▪️1/4 cup of chopped red onion
▪️1/4 cup of fresh chopped parsley
▪️1/2 cup - 3/4 cup of crumbled feta cheese (your choice, depending on how much cheese you like)
**** For the dressing ****
▪️3 tablespoons of olive oil
▪️3 tablespoons of lemon juice
▪️1 tablespoon of lemon zest
▪️1/4 teaspoon of salt
▪️1/4 teaspoon of garlic powder
▪️1/2 teaspoon of dried oregano
▪️Pinch of black pepper

DIRECTIONS:
🔹️Add 1 cup of couscous (uncooked) to a mixing bowl.
🔹️Boil water in your electric kettle. Immediately measure out 1 3/4 cups and add hot water to the couscous in the bowl. The water must be very hot! Mix quickly and cover the bowl with a plate. YES, a plate!! Simply place a large plate over top of the bowl to keep all the steam in. Keep covered for approximately 7 minutes. Uncover, fluff and let couscous cool.
🔹️Meanwhile make the dressing by combining all dressing ingredients in a bowl and giving it a good mix. Set aside.
🔹️Once couscous has cooled add cucumbers, red onion, parsley and feta cheese. Mix together. Then pour the dressing and mix again. Add salt and pepper to taste if required, or an extra squeeze of lemon juice. Enjoy!! 😋
