  • Lebanese rice pudding aka as #rizbihaleeb My version takes a lot longer to reach the right consistency because I omit the cornflour. The result however is a creamy & fragrant rice pudding. So delicious. This is traditionally cooked with a lot more added sugar. My palate is accustomed to a lot less sweet. There is a natural sweetness in the milk itself. You can serve with crushed pistachios or stewed fruit, particularly poached quince my favourite (poached quince recipe in highlights). I make this regularly for my dad and at times reduce the added sugar to 3 tbsp. With the poached fruit it’s a delicious & nourishing breakfast or dessert served cold or warm. 
I’ve had many requests for this recipe as it features regularly in my Instagram stories. Let me know how you find it. Enjoy the weekend x

Rice pudding

Serves 6

2 litres full cream milk
4-5 tbsp sugar
1/4 tsp salt
1/2 cup medium grain rice, rinsed & drained 
1 tbsp orange blossom water
1 tbsp rose water

In a large saucepan bring the milk, sugar & salt to a gentle simmer over a medium heat. This can take up to 10 mins. 
Add the rice and keep stirring until the milk comes back to a gentle simmer. 
Continue cooking over a low heat until the pudding thickens & rice is soft. This can take up to 2 hours. You can leave on the stovetop & stir every 5 mins or so. 
Once the pudding thickens remove from the heat & add the orange blossom water plus the rose water. Serve with crushed pistachios or stewed fruit.
