Another round of keto pumpkin spice cheesecake for the hubs and kiddies.
It’s pretty freaking hard to resist eating this entire 🎂 when the whole house smells like pumpkin spice heaven. I did sneak in a tiny bite to see if my little tweaks with the spices made a difference and heck ya it totally did! I used the pumpkin spice mix but still added cinnamon, nutmeg, all-spice and a drop or two of caramel pecan flavouring. To add a bit of crunch, I added some toasted walnuts around the sides of the cheesecake then I went crazy taking photos of it 😂😃🤣.

These muffins have been adapted from my Pumpkin Donut recipe - they’re soft, fluffy and I mean, now’s the time to enjoy ALL THE THINGS PUMPKIN annnndddd hello, veggies in your baked goods - #momwin .... get baking Mamas 👩🏽🍳
For all my Dubai friends - I have been buying pumpkins from @kibsons and making fresh Pumpkin Purée 🎃🎃
So here’s the recipe:
1/3 Cup - Coconut Oil
1/4 Cup - Maple Syrup
1/4 Cup - Coconut Sugar
2 Eggs - or Vegan Flax Eggs
1 Cup - Pumpkin Puree
1/4 Cup - Any Milk
1 Teaspoon - Baking Powder
1/2 Teaspoon - Baking Soda
1/2 Teaspoon - Ground Cinnamon
1/4 Teaspoon - All Spice
Sprinkle of Salt
1 3/4 Cups - Flour ( I used Spelt but you can use white, GF, wholewheat)
1/3 Cup - Whole Oats @bobsredmill
1/4 Cup - Choc Chips (or raisins)
1. Preheat Oven to 180C and line your muffin tray (regular sized muffins)
2. In a bowl, beat the oil, maple syrup and eggs together.
3. Next add the pumpkin puree and the milk and beat again.
4. Dry ingredients - add the coconut sugar,spices, baking soda/powder and a tiny sprinkle of salt.
5. Lastly, fold in the flour and oats and choc chips
6. Fill your muffin moulds 3/4 full and sprinkle the top with either oats, pumpkin seeds or choc chips
7. Bake for 20-23 minutes
8. Let them cool fully and then store in an airtight container for up to 3 days (or freeze)
