It is so satisfying to see the membrane pulled back so cleanly. I gotta be honest, I rarely get it to come off in a single perfect peel like this... but when you do... BAMM. It feels great!!!

Smoke on the Water
It is not a secret that tea and gin follow many pf the same principles of balance and flavor. The combination of the two of them is only natural in the cocktail space.
The name of this cocktail might have something to do with a song by the same name by the rock group Deep Purple, but the only major connection that I made is that they are both great. • 50ml @brockmansgin • 15ml Lemon
• 10ml @cointreau • 25ml Lapsang Souchong Tea
• 25ml sage syrup
• Garnish with Sage and Rosemary
The smoke that is summoned with this cocktail comes from the tea itself. Lapsang Souchong tea is sometimes referred to as smoked tea. The flavors of the smooth gin, bright citrus and savory tea and syrups bring this cocktail to an eerie level of cohesion.
This cocktail feels like the embodiment of being in a lake cabin in the woods watching the morning mist burn off the water as the sun rises.

What's your favorite way to grill chicken and why?
There are a few great ways but I like spatchcock. The chicken cooks faster and more evenly.
For this cook I went with 2 different rubs that I have never tried on chicken. I used @spiceology Raspberry Chipotle and @overthefirecooking Chipotle Garlic.
I can't say enough good things about these 2 rubs. The flavor is so different from your normal BBQ rub and is awsome on chicken.
I normally grill chicken indirect but this time I grilled the chicken skin down over direct heat. Then once I got the color that I wanted I moved them to indirect and skin side up.
What I found was the chicken was jucier and tasted better because of the char. I didn't brine these at all.

Pretty pleased with these ribs, they were quite lean so were a little on the chewy side, but really tasty with just salt, pepper and a little smoked paprika, so the meat could do the talking. The braised celery with @wiltshirechillies Chipotle Chilli Salt was delicious, although I'll string the celery next time to make it a little easier to eat and the German potato salad was a winner as usual.
