🎂 1. Swiss Meringue is prefect for fluffy borders as the egg whites make it extra light and airy! Also the bigger piping tips help push through more buttercream creating that extra height! For this cake, I used @wiltoncakes 1B💙

🎂 2. However if you want those bright colors that I love too, then American buttercream is the way to go! There is less butter used than Swiss/Italian meringue so it’s easier to achieve brighter colors without that yellow butter hue! •

🎂 3. You can also get American buttercream pretty white the longer you beat the butter! I like to beat mine for longer than 5 mins until it is the desired whiteness! You can always add white food coloring to help as well! •

🎂 4. Warmer months can wreck havoc on any kind of buttercream so you want to work fast and chill in fridge when needed! Sticking in freezer for 10/15 mins and then rewhip can help when you are in a time crunch! •
