  • 🍑😍 Apricot Oat Breakie Slice! 📷 by @amelietahiti 🚨🚨Recipe: APRICOT COMPOTE:
Around 8-9 medium apricots 
Half lemon juice
1 tbsp chia seeds
BASE: 
2 cups oats*
2/3 cup desiccated coconut
0,5 cup sunflower seeds
1/2 cup chopped dates
1/2 cup chopped dried apricots
1/2 cup peanut butter or tahini

Method
Compote: cut the fruits in 4 and add to a pan on medium heat with other ingredients. Add drop water when burning. Cook for about 6 minutes.
Then drain the juice away from the fruits like shown. Keep both
Base: Mix all the dried ingredients first. Then add peanut butter and lastly the apricot juice. Combine. 
Line an oven safe dish, add half of the oat mix. Press well (with clean hands it’s easy) Add compote fruits on top (not at the edge). Add second half of the mix and press again. 
Oven at 180C for 37minutes. Allow to cool so the top surface is completely cold, then move to a drying rack and allow another 20min to cool down and dry a bit. Then slice up and store in fridge!

  • Friday calls for crispy cauliflower wings with a sweet thai chili sauce from @mindfulbrewing 🙌🏼 Make sure to pair it with one of their delicious vegan brews too! 🍻 This is definitely one of my favorite breweries in the area! Not only for their unique and tasty drink menu, but also because of their delicious vegan food! These wings are my go to, but they also have an amazing vegan pizza, jackfruit, veggie burger, and more! Definitely check them out if you’re ever in the area! What do you have planned for the weekend?   • 🌱😍 NUT FREE VEGAN MAC N CHEESE! 📷 by @alexafuelednaturally 🚨🚨Recipe: Serves 4-6 
Vegan cheese sauce:
2 cups potatoes, peeled and chopped
2 cup carrots, peeled and chopped
1 can (15.5 ounce) great northern beans (aka white beans) rinsed and drained 
3/4 cup unsweetened plain, unsweetened soy milk or water 
5 tbsp nutritional yeast
1 tbsp lemon juice
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder

Other ingredients:
1 pound dried pasta, *Reserve 1/2 cup hot pasta water*
2 tbsp vegan butter, optional but i highly recommend
2 tbsp nutritional yeast

Method:
1.Boil or steam the potatoes and carrots in a large pot for about 20 minutes or until soft. 
2.In the meantime cook the pasta according to package directions. 
3.Meanwhile place all the vegan cheese ingredients in a blender (including the cooked potatoes and carrots) and blend until smooth. Taste the sauce and adjust ingredients as needed. 
4.Once the pasta is cooked, carefully spoon out about 1/2 cup hot pasta water into a cup and set aside. Then drain the pasta and return to pot. Add the vegan cheese sauce to the cooked pasta noddles, mix to combine, if the sauce seems to thick, this is when you can add some of the hot pasta water to loosen up the sauce. * If you’re using gluten free noodles, skip the pasta water and instead use regular hot water.*
5.Then add an additional 2 tablespoons of nutritional yeast, salt, pepper and 2 tbsp vegan butter (the vegan butter is optional) . 
6.For leftovers… to reheat it, add a little bit of plant based milk & or vegan butter if the sauce is too thick.

So eat right when you can so your body isn't getting building itself with toxins and junk 🤢 Remember fam, balance can only happen if you make the better choice when it's available!
